I have a two month old new-painted car, I think that's enough time for the paint to breath/cure (for the lack of better term), can I skip Step 1 and just use the Step 2 & 3 of Mothers?

B2B: Yes, clay cleans only the surface of the paint (on top of the paint), while a paint cleaner cleans the paint itself even embedded dirt.
