what would be the monitor connection? via VGA or via HDMI?
if your monitor supports both, then achieving it would be very easy... one monitor goes into the HDMI input of the video card and the other monitor goes into the VGA.

for the video card, i am assuming that you do not play games in that... (bihira ang games sa Linux).
    you can get

Asus NVIDIA GeForce 210 1GB DDR3 64-bit, low-profile card for HD HTPC entertainment | VillMan Computers or
Inno3D NVIDIA Ge Force GT630 2GB KEPLER 64BIT HDMI, Dual Link DVI, VGA | VillMan Computers

    it will work for you....

by the way, since you may have some issues with the drivers in Mint... do a sudo apt-get upgrade first prior to installation...
or you can try Ubuntu 15.10.... supported na sya.

    Thanks for the reply.

Via VGA pareho. I'll just buy a HDMI to VGA converter for the other one.

You are right, It's more for office productivity. I'm not into games.

Hirap yan dual monitor setup, our bodies are not designed for multi-tasking.

I have 3 laptops, 1 pc with dual monitor. I gave up the 2 laptops na. So now I only have 3 monitors. I don't think I can work with less.

it will work.... the HDMI to VGA converter thingie.
since you are not into games naman, just buy the video card which is cheap, that can handle both connections.... (HDMI and VGA).
just make sure that the video card is compatible with Mint. As i said earlier, baka hindi pa updated ang driver configurations ng mint on the newer cards..... subok ko na yan sa Ubuntu, not on Mint.
